> The local independent one man operations couldn’t take it on as it was too big a job and they didn’t have the appropriate skills to take care of all the work.

It’s always nice to have a cosy nook in a kitchen where you can relax with a cuppa or enjoy a spot of breakfast.
Even just a little perch is welcome, as it makes cooking more enjoyable with someone to chat too.
